French Beans with Minced Pork and Basil

          INGREDIENTS:                         METHOD
          • Lean pork, minced  2 taels (~80g)
          • French beans       4 taels (~160g)  1. Mix minced pork with the
          • Basil              5 leaves          marinade  and  set  aside  for

          • Shaoxing wine      2 Tbsp          2. Rinse,  trim,  and section the
          • Vegetable oil      1½ tsp            French beans. Rinse and finely
                                                 shred the basil leaves and add
          MARINADE (for pork):                   to the minced pork.
          • Light soy sauce    ½ tsp           3. Heat up ½ tsp oil in a non-stick
          • Sugar              ½ tsp             pan and stir-fry the minced
          • Cornstarch         ½ tsp             pork until golden.  Set aside.

                                               4. Prepare the thickener by mixing
          THICKENER:                             the cornstarch and seasoning
          • Light soy sauce    1 tsp             with water.
          • Sugar              1 tsp           5. Use the remaining oil to sauté
          • Cornstarch         1 tsp             the garlic and then stir-fry the
          • Water              4 Tbsp            French beans until they become
                                                 tender.  Add the pork and pour
                                                 wine along the side of the pan.
                                                 Pour in the thickener and cook
                                                 until it comes to the boil and the
                                                 pork is thoroughly cooked.
