Pan-fried Tofu with Minced Pork
         (Serves 1)

          INGREDIENTS:                         METHOD
          • Lean pork, minced  1 tael (~40g)
          • Firm tofu        ½ block (~175g)   1. Mix the minced pork with the
          • Ginger           1 slice             marinade  and  set  aside  for
                                                 about 15 minutes.
          • Spring onion,    1 stalk
             finely chopped                    2. Rinse the tofu and cut into
          • Shaoxing wine    1 Tbsp              pieces.
          • Vegetable oil    1 tsp
                                               3. Heat up ½ tsp oil in a non-stick
          MARINADE (for pork):                   pan.  Sauté ginger and then
                                                 stir-fry with the minced pork.
          • Light soy sauce  ¼ tsp               Set aside.
          • Sugar            ¼ tsp
          • Cornstarch       ¼ tsp             4. Wash the pan, heat up the
                                                 remaining oil and pan-fry the
          SEASONING:                             tofu pieces on one side until
          • Salt             ⅛ tsp               golden.  Then flip them over to
          • Light soy sauce  ¼ tsp               pan-fry the other side for about
          • Sugar            ¼ tsp               3 minutes.  Put them on a plate.
          • Cornstarch       ½ tsp             5. Add back the minced pork to

                                                 seasoning. Bring it to a boil.
                                                 Add the spring onion.  Pour the
                                                 pork and spring onion on top
                                                 of the tofu.
