Stir-fried Dried Tofu with
         Bell Pepper and Pineapple
         (Serves 2)

         INGREDIENTS:                       METHOD
         • Dried white tofu  1 piece (~200g)  1. Rinse and dice the dried white tofu.
         • Red bell pepper  1 piece (~120g)
         • Celery           2 stalks (~90g)    Rinse, trim and dice the celery.
         • Fresh pineapple  ⅓ cup           2. Rinse, core and dice the bell pepper.
         • Ginger           2 slices           Rinse and dice the pineapple.
         • Vegetable oil    2 tsp
                                            3. Use 2 tsp oil to sauté the ginger,
