Winter Melon Soup

INGREDIENTS: METHOD
• Winter melon ½ catty (~320g) 1. Rinse and dice the winter melon.
• Straw mushrooms 1 ½ taels (~60g)
• Dried scallop 1 piece (~5g) 2. Rinse and cut the straw mushrooms
• Frozen shrimps 4 pieces (~25g) in half.
• Lean pork, minced 2 taels (~80g) 3. Rinse and soak the dried scallop
• Water 2 cups
until soft. Drain and retain the
MARINADE (for pork): soaking water for use.
• Salt ⅛ tsp 4. Thaw, rinse and de-vein the shrimps.
• Sugar ½ tsp 5. Marinate the minced pork.
• White pepper a pinch
6. Boil up 2 cups of water together with
SEASONING: the dried scallop soaking water,
• Salt ⅛ tsp and then add the winter melon and
dried scallop. Bring to a boil and
then keep cooking at medium heat
until the winter melon is thoroughly
cooked (about 45 minutes).
7. Add straw mushrooms, then shrimps
and minced pork, and cook for
another 10-15 minutes.
