Vegetarian Lettuce Wraps
         (Serves 4, 2 pieces each)

          INGREDIENTS:                           METHOD
          • Vegetarian chicken  2 pieces (~220g)  1. Soak, trim and dice the
          • Frozen mixed        1 cup (~180g)       Shitake mushrooms.  Rinse
             vegetables                             and finely chop the peeled
          • Shitake mushrooms   8 pieces (~20g)     water chestnuts.  Rinse and
          • Water chestnuts,    8 pieces (~140g)
             peeled                                 dice the vegetarian chicken.
          • Lettuce leaves      8 leaves (~60g)  2. Defrost and rinse the mixed
          • Vegetable oil       1 Tbsp              vegetables under running
                                                    water.
          SEASONING:
          • Salt                ¼ tsp            3. Rinse the lettuce leaves, and
          • Sugar               ½ tsp               set aside.
          • Dark soy sauce      2 tsp            4. Prepare  the  thickener  by

          • Shaoxing wine       ½ tsp
                                                 5. Heat up oil in a non-stick pan.
          THICKENER:                                Besides the lettuce leaves, stir-
          • Cornstarch          2⅔ Tbsp             fry all the ingredients together
          • Water               ½ cup               with the seasoning until
                                                    thoroughly cooked, and add
                                                    in the thickener.  Serve with
                                                    the lettuce leaves.
