Dried Flatfish and Bean Sprouts Soup
         (4 bowls)















          INGREDIENTS:                      METHOD
          • Dried flatfish  1 piece         1. Pre-heat the oven at 160 C and

                            (~20g meat)        bake the flatfish for 10 minutes.
          • Soybean sprouts   4 taels (~160g)
          • Lean pork       4 taels (~160g)  2. Debone the flatfish and retain the

                                            3. Rinse and then drain the soybean
                                               sprouts.
                                            4. Combine all the ingredients and
                                               water in a large pot.  Use high heat
                                               to bring it to a boil, and then allow it
                                               to simmer at low heat for 1½ hours.
                                            5. Let the fish stock cool down and use
                                               a strainer to separate the stock from
                                               the ingredients.  Use small boxes or
                                               ice cube moulds to keep the stock.
                                               Store in the freezer or refrigerator
                                               until use.
